Spanish Chicken Croquetas
Today I will teach you how to make Spanish Chicken Croquetas from start to finish! Croquetas are one of the most consumed tapas in Spain per person, per year! and everyone has their own recipe! this recipe is a professional one that I have learned during my time here, so I hope you guys will enjoy it!

- 120 g Butter unsalted
- ½ Medium Onion or 1 small onion
- 120 g Plain (All Purpose) Flour
- 1 L Milk
- 350 g Shredded Chicken
- 1 tsp Nutmeg
- Salt to taste
Method:
Melt the butter over medium heat, and warm the milk in another sauce pan
Add onions and cook until they are transparent
Next, add the flour little by little, and continue stirring vigorously for 2 mins (roux).
Now, add the milk to the roux, stir continuously, and continue cooking for about 2 minutes
Season to taste the salt and nutmeg.
Add the chicken and mix well!
Method to Roll:
Place the dough in a tray and let the cool in the fridge for a few hours or until cold
Next, take a tablespoon of the mixture and shape the croquettes with your hands, about the size of a wine cork. -when shaping them, flour or oil your hands to make it easier.
Now Pane, (flour, egg, and breadcrumbs).
To make this easier, you can freeze them in flour and pane later, this helps if they are a bit to wet and soft.
Finally, We fry at about 180c. Get deep-pan to fry in, ( and to protect you from the oil!) the oil must completely cover the croquettes when frying
